Puglian Bombette

Small meat rolls with a melting cheese heart.

Bombette are the undisputed kings of the "fornello pronto" (butcher's grill). They are thin slices of pork capocollo wrapped around a filling of Apulian canestrato cheese, salt, and pepper.

Slowly roasted in vertical wood-fired ovens, the outer meat becomes crispy while the inner cheese melts, creating a flavor explosion in every bite. They are the ultimate street food found in local butcher shops.
