Fava Bean Puree with Chicory

The ancient meeting of sweet beans and bitter greens.

This dish represents the peasant soul of the Itria Valley. Dried white fava beans are slow-cooked until they transform into a thick, nutritious cream.

It is served alongside sautéed wild chicory, whose bitter taste contrasts perfectly with the sweetness of the puree. The dish is finished with plenty of raw extra virgin olive oil and slices of toasted Altamura bread.
