Sea urchins
The specimen of Paracentrotus lividus, is a species of sea urchin commonly consumed throughout the south of Italy. Many recipes use red gonads of this animal, since they are very tasty and fragrant. The best use, however, is the simplest, just with bread and white wine as accompaniment, can be found in all fish markets, except for the months of biological rest period (from the 30th of April to the 30th of June).
