Wild mushrooms

There are various wild mushrooms consumed in Puglia, they can often be also mildly toxic mushrooms with heat-labile toxins, such as various types of Russula. Much appreciated, for example, is also the pup'razz, dialectal name for Russula delica, whose qualities were praised already in some chronicles of the seventeenth century.
