With its stuffed of mozzarella, tomato, oregano and capers, the panzerotto, either fried or baked, is perhaps the most typical takeaway food in Apulia. A lesser-known version of the panzerotto of Alberobello, is the version with the extra ingredient of the traditional “ricotta forte”, our spicy ricotta.
