Fried Panzerotti

The golden crescent filled with tomato and mozzarella.

The panzerotto is a symbol of Apulian conviviality. A leavened dough, similar to bread dough, is rolled into small discs, filled, and folded into a crescent before being submerged in boiling oil.

The traditional Alberobello version features a simple filling of tomato and fresh mozzarella, though it's common to find them enriched with capers or a hint of chili. They must be eaten very hot—just watch out for the melting heart!
