Bocconotto

It is part of the festive tradition of Easter, but can be purchased throughout the year. It is a fresh pastry stuffed with almonds and cherry, and has spread throughout the Murgia. A version of the town of Bitonto, from a recipe of the Benedictine nuns of the site, provides a filling of ricotta and candied fruit.
