It is well known that a fundamental part of a trip in Puglia is food. If you love meat, you cannot miss one of the most renowned Apulian culinary traditions: the so-called "fornello pronto" (grill house).

Imagine going to a local butcher and immediately find yourself in an embarrassment of riches to buy among the meat delights. In fact, you will have to deal not only with the classic traditional meat recipes of Puglia, but also with the numerous variations proposed by a butcher.

You can choose to order a mixed grilled meat, obviously including the legendary Apulian “bombette” (litterally translated as “little bombs”), small rolls of meat, stuffed with melted cheese, found in dozens and dozens of variations... Of course, don’t forget to taste the famous "gnomirelli", tiny knots of liver. You can then continue with some “zampina”, a sausage swivel with many spices inside, usually kept as a secret. You will also have to resist the temptation of the cingomme (lung rolls), the brasciole, the stuffed chicken and the "simple" cuts of classic sausages, the ribs, the capocollo, the vetresca and ... as an italian proverb says, “the more you have, the more you put”.

Once you have passed the difficult phase of the choice, imagine that at an agreed time, the butcher waits for you with already roasted meat ready to take away. You can enjoy your delicious dinner in the trullo where you stay or on the veranda of your holiday home, accompanying it with a glass of excellent local red wine.
